Bone broth comes in a mug at Sydney’s first dedicated broth shop, Broth Bar & Larder.
Taking up digs in the iconic space at 49 Belgrave St, Bronte – once home to Hank of Hank’s Jam and Igor of Iggy’s Bread – there’s no denying, Broth Bar & Larder has a home-grown legacy to uphold.
Yet after spending the last five years operating as backyard business, Star Anise Organic Wholefoods, we think owner, Soulla Chamberlain (pictured on right) will have no problem maintaining it.
“Broth Bar & Larder is an extension of my kitchen. It was born out of a desire to create a small and inviting space to enjoy homemade, nourishing and completely unprocessed foods made to the same standard that my children and I eat at home,” Chamberlain says on her site.
The original wholefoods shop makes up the Larder while the Broth Bar, which provides a dine-in option, comprises just five stools under the store’s glass façade. At BB&L, broth comes in all shapes and sizes. Choose a mug of vegetable stock and add a flavour bomb – a squeeze of lemon, some spices, coconut milk or a slosh of fish sauce and tamari – order a chunky, bone-based soup or salted caramel smoothie with broth-infused ice cubes, or try the summer favourite, ‘brothsicles’ – popsicles available in raw cacao, strawberry and Kombucha…with a hint of broth of course.
At the store, Chamberlain aims to combine the wisdom of ancestral diets with the latest developments in nutritional medicine meaning all her products are free of artificial or processed ingredients. While there is a focus on broth, she assures us that in most cases it is just an added nutrient-kick and you don’t even notice it’s there.
But don’t be fooled, stock is not the only thing on the menu. You’ll also find activated buckwheat-based muesli, date and white chocolate coconut balls and even a provincial plate of chicken liver pâté, fermented vegetables, gruyere raw milk cheese and crusty bread.
Broth Bar & Larder is about bringing nutrient-dense, traditional wholefoods back to the modern table for vibrant health and longevity…starting with a simple cup of broth. All Star Anise Organic Wholefoods products are hand-crafted on site according to traditional preparation techniques and are free from refined sugars, gluten, industrial seed oils, tap water, agave syrup, and (other than the pâté & some soups) also free of dairy.
