We are well and truly in the midst of winter. The mornings feel close to sub-zero temps and more and more weekends are spent hibernating at home.
After a long and tiring work week and a busy Saturday running around, you wake up on Sunday morning (hopefully without an alarm) and all you feel like is a delicious, warm (and slightly naughty) breakfast that you can treat yourself to in bed. We totally get you—which is why when we came across this recipe recently, we knew we just had to share!
Not only does it cater to gluten-free diets, it contains a few simple ingredients that you probably already have in your kitchen (which means no quick dashes to the corner store in your Uggs).
The even better part is that you can make it as healthy or unhealthy as you like by swapping (or leaving) a few things out—but you know what they say, if it ain’t broke, don’t fix it.

RECIPE: GLUTEN-FREE FRENCH TOAST WITH
BANANA + FRESH BERRIES
Prep time: 15 mins
Cooking time: 16 mins
Serves: 2-4
Ingredients:
8 slices Helga’s Gluten-Free 5 Seeds Bread
4 eggs, lightly beaten
2/3 cup milk
1/3 cup honey
20g butter, for cooking
1/3 cup natural peanut butter
4 ripe bananas, thinly sliced
1 1/2 cups mixed fresh berries
Icing sugar, to dust (optional)
Method:
- Beat the eggs together with milk and 1 tablespoon of the honey. Gently dip 4 slices into egg mix for 15 seconds.
- Heat half the butter in a large non-stick frypan over medium heat until bubbling. Lower soaked bread slices into hot pan.
- Cook gently for 3-4 minutes, on each side, or until golden and crisp on each side.
- Repeat to make second batch and cover with foil to keep warm.
- Spread half the French toast slices thinly with natural peanut butter and top with sliced banana.
- Stack together with remaining slices of French toast. Scatter with berries, dust icing sugar over and drizzle with remaining honey.
