This liquid version of the classic peanut butter and jam sandwich is a revelation. It’s easy to prepare, outrageously tasty and the strawberries create a beautiful marbled effect, while the lime adds a fresh twist. It might seem easier to just throw the strawberries in the blender with the rest of the ingredients, but please respect the layers, they are what takes this milkshake to the next level.
Peanut Butter and Jam Milkshake
Serves 2 or 1 large
For the peanut butter milkshake
1 ripe banana, peeled
3 tablespoons quality peanut butter (or any other Nut Butter)
250 ml (8½ fl oz/1 cup) oat milk (or milk of choice)
2–3 ice cubes
fresh strawberries, tops removed (organic if possible)
juice of ½ lime
Put all of the peanut butter milkshake ingredients in a blender and blend on a high speed until completely smooth.
Cut the strawberries into quarters and lightly mash them with a fork before dividing them between two medium-sized glasses or putting them in a large one (as featured in the photo). Squeeze the lime juice over the strawberries and muddle them with the back of a spoon to release some of their juices.
Pour the peanut butter milkshake on top of the muddled strawberries and serve.
