Healthy Dessert Recipe: Dairy-Free Neapolitan Cheesecake Slice

Considering how delicious these raw Neopolitan cheesecake slices look, you’d be forgiven for thinking they may be too complicated to make, but really, you only need a handful of easy-to-find ingredients (most of which you’ll already have in your pantry!) to create this healthy dessert.
Across each layer you’ll find a mixture of cashews and coconut cream combined with the natural sweetness from fruits like banana and dates as well as the addition of  rice malt syrup, cacao and coconut oil for all the healthy fats and antioxidants (there’s even an avocado in their somewhere!). The inclusion of Happy Way’s all-natural chocolate protein powder ensures you’re also getting a good hit of protein which assists with feelings of satiety.

Base layer
1.5 cups of dates, pitted
1 cup of cashews
1/3 cup of hazelnuts
2 T of cacao powder
Strawberry layer
1 cup of strawberries or raspberries
2 ripe bananas, peeled
1 cup of cashews, soaked for a few hours or overnight
2 T maple syrup
2 T of coconut oil, melted
Vanilla layer
1 cup of cashews, soaked
1 can of coconut cream, cream only
1/2 cup of rice malt syrup
2 T of coconut oil, melted
1 tsp of vanilla powder
Chocolate layer
1 ripe avocado, ripe and peeled
1 ripe banana
1/4 cup of dates, pitted
2 T of cacao powder
2 T coconut oil
1 T of chocolate protein powder @happywayau
1. For the base, place all the ingredients into a food processor. Press into a square shaped pan. Place into the freezer to set while you make the strawberry layer
2. Strawberry layer: place all ingredients into the cleaned food processor. Blend until smooth and creamy and pour over the base. Place into the freezer for an hour at least or until set.
3. Repeat with all layers and allow it to set and freeze between layers. I scattered strawberry slices within the vanilla layer.
4. Freeze and enjoy!
