We’re the type of person who loves a citrus dessert. Let’s forgo the chocolate, and split a fruit tart. Cheesecake? Not today. A sweet snack will also do everything to satisfy your taste buds. Thankfully, our resident recipe geniuses Jacqueline Alwill (accredited nutritionist and author) and Brittany Darling (accredited nutritionist and herbalist) have a formula for a zesty, flavorful dessert chock full of healthy goodness. Citrus is a good source of fiber, can help reduce the risk of heart disease, the symptoms of colds, your risk of stroke, reduce the risk of kidney stones, is hydrating, and can help your skin look good. It’s also full of Vitamin C. However, Vitamin C (think: oranges, lemons, tangerines, limes, and grapefruit) is an excellent way to help boost your immune system as well.

Gluten-free
Makes approximately 16 bars
Ingredients:
- 2 cups raw cashews
- 1 cup shredded coconut
- 1/2 cup fresh orange juice
- 1 1/2 teaspoons orange zest
- 1/4 teaspoon cinnamon
- 1/4 teaspoon turmeric
- 2 tablespoons honey/maple/rice malt syrup
- 3 tablespoons coconut oil (melted) or MCT oil
- 4 servings collagen powder
In a food processor, combine raw cashews and shredded coconut and blitz to a crumb. Add remaining ingredients and blitz until it forms a sticky dough. Mix ingredients together for several minutes until you get a good consistency.
Remove from the food processor then press into a lined loaf tin and pop in the freezer to set for 2 hours. Slice into 16 bars and enjoy. Store in fridge up to 1 week or freezer up to 2 weeks.
