I’m on a low carb, high fat ‘diet’ at the moment. The reason I’ve put the word in quotations mark is that it doesn’t feel like a diet at all. In fact, since I started a few weeks ago, I’ve eaten pizza (several times), pasta, pancakes, Mexican food and a rather alarming amount of cheese. Meanwhile, the scales have shifted, I no longer feel bloated, my stomach is flatter and I have the energy levels of a Jack Russell puppy. And the best part is, I haven’t been tempted to go back to my old way of eating at all (which is no easy feat for a self-confessed carb-oholic!) Why would I, when I feel amazing and I’ve been able to able to eat all of my favourite foods?
One of the best things about this ‘diet’ is that it’s forced me to get creative in the kitchen and come up with low carb alternatives to the things I like to eat. Because, let’s face it, life is way too short to live off chicken, broccoli and cottage cheese! So, whether you’re planning on committing to the LCHF lifestyle for the health benefits or you just want to reduce your carb intake, here are some of my favourite low carb recipes. Not only will they actually keep you full (thanks to being high in healthy fats) but they also happen to taste amazing.
