I’ll be honest: I’ve never met a frozen dessert I didn’t love, particularly sweet and refreshing popsicles. So I’ve decided to put a contemporary (and grown-up) spin on this classic treat, combining fresh mint, honeydew melon with white wine. Not only are they super easy to whip up, but they also taste amazing.
Honeydew, mint and wine pops

Makes 10 servings
YOU WILL NEED:
Infused Simple Syrup
1 cup water
1 cup granulated sugar
4 springs fresh mint
Pops
½ honeydew melon, peeled and cubed
¾ cup sweet or dry white wine
METHOD:
In a small saucepan, combine the water, sugar, and mint springs. Simmer gently for 10 minutes. Cool and reserve.
To Make the Pops
In a blender, blend the honeydew and white wine. Add the syrup and pulse to combine.
Pour the mixture into individual ice pop molds, add sticks, and freeze until solid, approximately 6 hours.
