A rotisserie chicken is the ultimate lazy dinner option. It’s affordable (especially if you get it on special, late in the day) and there’s no cooking or preparation involved — you simply tear it up into pieces and you’re good to go! It’s super versatile too, as you can use it in anything from salads to sandwiches and wraps — or you can just eat the pieces as is — a protein-rich snack!
But the best thing about roast chicken is how you can really stretch it out and get a week’s worth of food out of it — if you’re creative, that is! My favourite thing to do with some leftover roast chicken is to make a chicken salad roll. Just chop the chicken up finely and mix through with some mayo, mustard, salt and pepper, celery and herbs and serve on some nice fresh bread!
