Avocados are hands-down my absolute favourite food. They’re creamy, rich, and full of health benefits. How does a food get any more perfect? In this recipe, I’ve combined avocados with cucumber for a refreshing, nutrient-rich soup. Trust me, it will remind you of summer with every sip!
Cold Cucumber-Avocado Soup
Makes 4 servings
Ingredients:
1 English cucumber (seedless), chopped
1 ripe Hass avocado, cubed
¼ large red onion, chopped
2 tablespoons Greek yogurt
1 tablespoon fresh dill
Juice of 1 lime
1 ½ teaspoons of sea salt
1 ¼ cups cold water
4 fresh dill springs, to garnish
Directions:
- In your blender, combine the cucumber, avocado, red onion, Greek yogurt, dill, lime juice, and sea salt and blend for 30 seconds to combine.
- Stream in the cold water and blend until smooth.
- Chill for 30 minutes, or serve immediately with a sprig of dill to garnish.
