How To Get A Week's Worth Of Meals Out Of One Roast Chicken

A rotisserie chicken is the ultimate lazy dinner option. It’s affordable (especially if you get it on special, late in the day) and there’s no cooking or preparation involved — you simply tear it up into pieces and you’re good to go! It’s super versatile too, as you can use it in anything from salads to sandwiches and wraps — or you can just eat the pieces as is — a protein-rich snack!
But the best thing about roast chicken is how you can really stretch it out and get a week’s worth of food out of it — if you’re creative, that is! And if there’s one person who knows how to get creative with food, it’s Aussie chef, TV host and Lilydale Free Range Tribe Ambassador, Hayden Quinn. Here, we asked him for 5 of his favourite roast chicken recipes.

Make a chicken salad roll

My favourite thing to do with some leftover roast chicken is to make a chicken salad roll. Just chop the chicken up finely and mix through with some mayo, mustard, salt and pepper, celery and herbs and serve on some nice fresh bread!
